Spicy Vegan Vodka Pasta

As I am sure you all know about the Gigi Hadid Vodka Pasta, this is a vegan spin on that dish. For those of you that are vegan or dairy free, this is a great option that is still as yummy as the original recipe with the heavy cream.

Step 1: Heat olive oil over low-medium heat and add onion. Wait until the onion is fragrant and translucent before adding in your garlic. Saute the two together till you get a strong combination of smells.

Step 2: Add in tomato paste and combine it with the onion and garlic. Keep the mixture moving, so the garlic does not burn. When the paste has turned a deep red color turn the heat down to low and add in your vodka. Let that summer for 10 minutes.

Step 3: Combine in coconut milk along with salt, pepper and lots of red pepper flakes and let simmer for about 5 minutes.

Step 4: Simultaneously, cook your choice of pasta based on dietary needs. Once your pasta is cooked, drain and leave about a cup of pasta water.

Step 5: Stir everything together and enjoy!

  • 3 tablespoons olive oil
  • 1/2 cut of minced yellow onion
  • 3 minced cloves of garlic
  • 3 ounces or one small can of tomato paste
  • 1/4 cup of vodka
  • Box of pasta of choice
  • Salt, pepper, red pepper flakes to taste

Cucumber Tomato Salad

This salad is perfect for a summer or spring lunch. It is super light and full of all of those good vitamins and the best part is that it’s completely vegan.

Step 1: Slice up tomatoes, cucumbers and greek olives.

Step 2: Toss vegetables with olive oil and balsamic vinegar glaze.

Step 3: Add in salt and pepper and enjoy!
